| 520 | |a أظهرت نتائج هذه الدراسة أن حليب الإبل له ثباتيه حرارية أقل من حليب البقر وأن زمن الثخثر الحراري لحليب الإبل يرتفع بارتفاع قيمة ال pH ضمن المدى 6.3-7.2 ولم يظهر منحي زمن الثخثر الحراري /pH لحليب الإبل وجود قيمة تباتية قصوي حول 6.7 pH وقيمة ثباتية قرب 6. 8 pH اللتان يتميز بهما منحنى زمن التخثر الحراري pH لحليب الأبقار. كما أدت المعاملة الحرارية عند 90 م لمدة 30 دقيقة لحليب الإبل إلى خفض ثباتيته الحرارية. زيادة تركيز ايونات الكالسيوم لحليب الإبل تقلل من الثباتية الحرارية، في حين إضافة عوامل ماسكة للكالسيوم مثل EDTA والإكزالات أدت إلى رفع الثباتية الحرارية. |b This study has indicated that heat stability of camel milk was less than that of bovine milk. The Heat Coagulation Time (HCT) of camel increased with increasing the pH value of milk throughout the range of 6.3-7.2 HCT/pH curve. Camel milk did not show a maximum stability around pH 6.7 or minimum stability near pH 6.8 which characterize the HCT/pH curve of bovine milk. Preheating at (90C0, 30 min) of camel milk reduced its heat stability. Increasing Ca2+ concentration of camel milk decreases the heat stability. While the addition of calcium chelating agents such as EDTA or Oxalate increased the heat stability of camel milk. | ||
